The harmonious marriage of the two main indigenous red varieties of Crete gave us a wine that laid the foundation for the further promotion of Cretan wine worldwide.
Variety Kotsifali, Mandilaria
Flavor Profile Vivid red color. Pleasant aroma of sweet, red fruits such as cherry and strawberry. Mild taste with soft tannins, good acidity, very good balance and aromatic aftertaste.
Winemaking The grapes are hand-picked and then cooled. Crushing and destemming are carried out and then very soft maceration during extraction is the next step. The presses are kept completely separate. The extraction is carried out for 1 week with simultaneous initiation of alcoholic fermentation. Alcoholic fermentation takes place with selected yeast strains at a maximum temperature of 25C.
Cretan Boutari is the first wine to leave the borders of the island and showcased the potential of local white varieties as well as the possibilities of the Cretan vineyard to the general public.
Variety Vilana
Flavor Profile Bright white-yellow color with intense aromas of white flowers and fruits, such as peach, apricot, pineapple and mango. Very good balance, mild flavor, pleasant acidity and long aftertaste.
Winemaking The grapes are hand-picked and then chilled. The crushing is carried out with a very fine pressure. The presses are kept completely separate. The free juice runs at a very low temperature to obtain high-purity juice without the use of filtering aids. The alcoholic fermentation takes place with selected yeast strains at a maximum temperature of 18C.
Moschofilero Boutari is the most famous and well-known white wine and its name is now a "synonym" for the Moschofilero variety.
Variety Moschofilero
Flavor Profile Light, soft white color with grayish highlights and intense varietal aroma of flowers and citrus fruits on the nose and in the mouth with white rose and citrus fruits dominant. Fresh wine, full and balanced, with a lasting aftertaste.
Winemaking The grapes are cooled to 10 C. Hand sorting follows, followed by crushing and entry of the grape pulp into the press. The pre-fermentation extraction technique in the presence of inert gases is applied to part of the quantity and then a pressure program follows. The juice that is released is transferred to stainless steel tanks where it is de-mudified by applying cooling. The temperature of the alcoholic fermentation ranges from 14-18 o C to preserve the primary and secondary aromas.
The first Greek red bottled PDO wine released on the Greek market, it is Greece's trademark in red wines.
Variety Xinomavro
Flavor Profile Deep red color with a strong personality and lively hue. It reveals a rich bouquet of ripe red fruits, blackberry and plum, which coexist with those of aging, cinnamon and wood. It has a rich and full body, good balance and a velvety aftertaste.
Winemaking Cold extraction for 24 hours, percentage bleeding for rosé, controlled alcoholic fermentation with selected yeast strains at 19-23C, gentle extraction with intensive recycling before the start of fermentation (7-10 days), pressings were not included in the blend at all, malolactic fermentation, French oak barrels for 12 months, mild filtration with large-diameter diatomaceous earth, final filtration (polishing) with filter papers.
Two varieties, Agiorgitiko and Cabernet Sauvignon, originating from the Peloponnese, offer a strongly aromatic bouquet of red fruits with an excellent velvety aftertaste.
Variety Agiorgitiko, Cabernet Sauvignon
Flavor Profile Deep ruby color with purple highlights. Complex aromatic character reminiscent of black cherry and raspberry, while framed by more mature characters of plum, black pepper and licorice. Rich body, soft tannins, excellent balance and a long aromatic aftertaste.
Winemaking The varieties are vinified separately and at the end of the maturation the master blend is made. It is matured in stainless steel tanks without passing through barrels to preserve its fruity character to the maximum.
Two varieties, Moschofilero and Chardonnay, create a distinctive, lively and fresh blend of great aromatic intensity and high acidity.
Variety Moschofilero, Chardonnay
Flavor Profile Bright, pale yellow in color with primary aromas of citrus, melon and grapefruit. It is a cool wine with a nervous character, medium structure and a lasting aromatic aftertaste.
Winemaking Separate white vinification of the individual varieties is carried out, with a percentage of pre-fermentation cryo-extraction. Then, alcoholic fermentation takes place in stainless steel tanks, at a low temperature (18-20 °C), with the aim of intensely highlighting the varietal aromas. The blend is carried out during maturation.
The Moschofilero and Cabernet Sauvignon varieties give the wine an unexpected flavor, a wonderful balance of acidity and sweetness, and an exquisite fruity aroma.

Flavor Profile Bright, light onion skin color with elegant aromas of white-fleshed peach, rose, raspberry and honey. A particularly pleasant rosé wine with freshness, crisp acidity and a sweet aftertaste.
Winemaking The winemaking is carried out using a combination of methods that include vinification by bleeding from Cabernet Sauvignon to which a portion of the Moschofilero variety has been added. It is aged in stainless steel tanks with regular stirring of the fine lees for 3 months.
