Varietal Composition:
Xinomavro 100%.

Area / Vineyard:
Amyntaion wine-growing zone.
"Hedgehog" at an altitude of 690 meters, facing north, overlooking Lake Petros and Mount Voras.

Vinification / Aging:
Pre-fermentative cold extraction in an inert environment, alcoholic fermentation at a controlled temperature. The wine is aged for 8 months on its lees with periodic stirring. Initially for 12 months in selected new French oak barrels of medium porosity "white" char and then for at least 14 months in the bottle before being released to the market.

Taste characteristics:
Deep red color. Complex bouquet with characteristic aromas of flowers and spices (vanilla, pepper, cloves), with tones of ripe blackberry, sun-dried tomato and dried fig. Full mouth, with vanilla aroma, rich structure, balanced acidity and notes of well-worked barrel, on the aftertaste an intense aroma of quince.

Harmony:
It combines harmoniously with juicy grilled meats, country sausages, roasted red peppers, rabbit stew, braised meats, country pies and spicy hard cheeses.

Ideally enjoyed at 16-18° C.
